In any celebration, you cannot miss a chocolate dessert and this is ideal for a buffet. It will disappear in a flash.
Have you thought about putting chocolates on your New Year’s Eve buffet? Not bad… but the dessert that we propose is still better. The typical Christmas log is already cut and decorated with a cloud of cream. Easy to catch and absolutely delicious. You will see how they close their eyes when they bite it.

Preparation time: 1 hour and 30 minutes
- 350g sugar
- Aged rum
- 4 eggs
- 75 g of flour
- 30 g of cocoa powder
- 275 g butter
- 400 g of dark chocolate
- 2 dl of whipping cream
ELABORATION
Step 1. Crack the eggs. Do this by separating the whites from the yolks. Beat the last ones with 75 g of sugar until they are whitish. Add the sifted flour with 25 g of cocoa and 25 g of melted butter. Add the whites mounted to the point of snow and mix gently.
Step 2. Preheat the oven to 200º. Spread the dough on the baking sheet lined with parchment paper and bake for 5 to 7 minutes. Dump the cake on a slightly damp cloth, remove the paper and roll it up.
Step 3. Melt the remaining butter. And mix it with 1 tablespoon of rum and 250 g of sugar. Add the melted chocolate to the water bath. Unroll the cake, cover it with the chocolate and roll it up again. Let it cool.
Step 4. Whip the cream with the remaining sugar. Cut the log into slices and serve them with the cream and sprinkle with cocoa. Sprinkle the cake with milk or fruit juice before filling it and it will be juicier.
